This is you basic pizza with eggplant, tons of garlic, and vegan mozarella Ingredients: Store bought pre-baked pizza dough (most health food stores carry a vegan dough) 1 org. eggplant 2 cloves of org. garlic Org. Olive oil Org. parsley 1/2 cup of org. flour + Spices - Salt, pepper, cayenne pepper, parsley, garlic or garlic powder Vegan org. tomato sauce Follow your heart mozarella Bake sliced eggplant with some EVOO for 10 mins at 350 and let rest. Dip in water (or water with lime juice) and then cover with a mixture of the flour and the spices (use your judgement for the amounts). Bake or fry until lightly brown. Prepare a mixture of the garlic, some EVOO (less than a quarter of a cup) and finely chopped parsley. Cover the dough with a third of the oil in the mixture and bake for 5 mins. Add tomato sauce and garlic from the mixture (see under Prepare sentence), bake for another five minutes. Add slices of vegan mozarella, slices of eggplant, and the remaining olive oil mixture loosely over the pizza. I tried broiling this entire thing but I left it a half a minute to longer and the edges were too crisp and a bit on the dark side so broil until mozarella melts. Are there any suggestions on cooking eggplant (first time using it)?

  3. I have a couple of questions regarding Buried Treasure Aller-Ease (http://www.lifelinefoods.com/Products/AllerEase_G.html this stuff). First of all, Is it 100% Vegan? It does say that it is dairy free but it does not say if it is vegan or not (I also checked their website but couldn't find anything). Second of all, it has 1000 mcg of Vitamin B-12 (cyanocobalamin) so would this be a good source of getting my vitamin B-12 as well instead of an individual supplement? If it isn't vegan can someone recommend a liquid allergy medication? I have terrible cat allergies but I have been wanting to volunteer at the animal shelter again in the cat wing cause I love cats. If it isn't a good way to get easily-absorbed vitamin B-12, then is B-12 spray (http://www.veganstore.com/index-store.html?deptid=21236&parentid=92&stocknumber=497&page=2&itemsperpage=12) effective (i.e. do you feel that it is good alternative)? What does it taste like? Hopefully I can get an answer within 14 days cause if it isn't vegan I have 14 days to return the Aller-ease.
  4. These pancakes taste more like buttermilk pancakes than any vegan pancake I've made thus far. While experimenting with making pancakes fluffier and not so dry, I made these and I think it works so here it is. Ingredients 1/2 cup to 1 cup of soymilk (adjust to pancake batter consistency desired) 1 tbsp of olive oil 1 tbsp Earth Balance 1 tsp Organic Sugar 3/4 cup of organic spelt flour (whole wheat pastry flour works too) 1/2 tsp of salt 1 tsp of baking powder 1/2 tsp cinnamon 3 tbsp of oats handful of crushed walnuts Beat the Earth Balance and sugar with a fork making sure it is well mixed and creamy. Add 1/2 cup of soymilk and olive oil. In a separate bowl mix the flour, salt, baking powder, oats walnuts, and cinnamon. Add the dry ingredients to the wet ingredients and mix well. Add soy milk to create the desired pancake batter consistency. Cook till lightly browned on both sides (turn them only once). Add maple syrup and enjoy. Makes about 6 regular sized pancakes. Let me know if this works out or not.
  5. Since there is a general thread regarding nutrition, I wanted to make one more specific to cycling. What do you eat on a typical training day? What do you consider a typical training day (i.e. 40 miles)? I would like to start training but I just can't seem to get enough calories in a day.
  6. I regularly make these for my nonvegan friends. Ingredients: 1 cup of organic whole wheat pastry flour (or white) 1/4 cup of chopped almonds 1/4 cup of quartered dried black cherries 1 chopped bar of chocolate (Chocolove makes a Cherry Almond Bar that goes well with the cookie) 1/2 tsp of salt 1/2 tsp of baking soda 1/2 cup of organic sugar 1/2 cup of Earth Balance Buttery Spread 1/3 - 1/2 cup of oats 1/2 tsp of cinnamon Pre-heat oven to 365 degrees. Combine room temperature Earth Balance with sugar and mix. Combine flour, oats, salt, baking soda, and cinnamon separately. Mix the two using your clean hands. Add chocolate, almonds and black cherries and combine completely. Make little balls and squish to 2 inch rounds. Bake for 10-12 minutes. I usually let the dough sit for 30 minutes to an hour because I like a relatively flat, crispy cookie. Enjoy.

    I'm Luis from Tallahassee, FL. Right now I'm trying to get into yoga to improve my flexibility so that I can do ballet in the fall. My main hobby is cycling. If anyone one has any recommendations on yoga reading materials, please feel free to post 'em.
