  1. Love red kale and dino kale. So, I've been eating Kale Salad like crazy the last couple of weeks. My favorite has been the 'Molested Kale Salad' recipe. YUM!
  2. Had the banana burrito for breakfast. Thought it was weird , but was yummy.

Diversity is cool. robert-It was about time that I posted my intro. Glad you had a good time here. The weather was much better last week. It rained a little bit today. Did you get a chance to hit Native Foods in Costa Mesa? The kids and I usually hit it after biking. My son loves the Seitan Nuggets. Matt-Sometimes it’s hard to believe there are other parents like us. You wouldn’t believe how many times a week some of the parents at my son’s school hit McDonald’s. Still working on a snack menu for the kids, so far, it’s veggies, fruits, oh-have you tried Uncle Eddie’s Cookies? (my kids love ‘em), those Heritage O’s from WH and of course hummus with crackers. finbarrio-Just discovered Mt. Biking and trail running recently, grew up in a family of runners….Mom and Dad ran marathons, brother and I ran mostly 10Ks. Ran a few marathons. Mt. Biking and trail running have given me muscles in my legs and arms that I would never get from just road running alone. Hubby really likes the results too. Was thinking of the Xterra Duathlon in Temecula, but I’m not ready for it and it’s in a couple months. Which one are you and your sister doing? Also, was planning on doing Muddy Buddy this year, but my partner is thinking of moving to Denver….argh. CollegeB-Hi Back! markc7-Isn’t it cool that a vegan diet makes you faster? Not training for a marathon right now. Just want to maintain and do at least a 20 miler once a month. How about you? Michelle-Hi, thanks for the welcome. flanders77-Thanks for the welcome.   4. Hey All: My name is Leana. Been lurking for the past year or so and decided to start this year fresh and delurk. I’m not 100% vegan, but working on it. Hey, it’s hard when you’re a busy Mommy with two little kids. Daily I try to consume raw juices like fresh squeezed carrot/apple with parsley and/or kale (had my Greenstar for over a year now, it’s a very good juicer), Chocolate Vega, a smoothie like Infusion with bananas and blueberries, and grain salads like tabouleh, cous cous or quinoa. My change in diet was not to lose weight but because I was training for a marathon last year. I found that when I followed a vegan diet, I ran a lot better. What a surprise! Right now, I’m trail running and mountain biking about 3-4 times a week, mostly depends on if I can get out of the house. If not, I’ll just hop on my treadmill. Sometimes though, I’ll just hook up the bike trailer (by the way….parents, Chariot bike trailers ROCK!) to my mountain bike and the kids and I will hit the trails together. My goal for this year is to enter an off road duathlon. Looking forward to contributing.
