You can get lots of protein and calories through beans/legumes (chickpeas/garbanzo beans, black beans, lentils, etc). Have you read Skinny Bitch? There's a lot of non-dieting stuff in there, too, and it's not geared specifically towards athletes, but it does have some good, simple, vegan dietary advice for women.
