Cilantro, coriander, tarragon, lemongrass and other herbs

This one is for our master chefs like "Tiff and associates"

 

Do you like any of these herbs?

 

What types of dishes might you use each one named above in?

 

What do you they taste like?

 

They always look so nice in the organic produce section but I am scared to get some because I have no idea what dishes to make with them and what they would taste like. herbs can be quite expensive, no?

if you got an unhulled tahini paste you could use the tarragon to make a vegan bearnaise....it'd possibly be a bit shit trying to match it with food though.

 

the rest just use like you'd do normally. lemongrass stems are particularly good in thai dishes and soups.

 

coriander is good to balance out chilli, in mesculin salads and in some italian shits.

 

i refuse to use cilantro because i think it tastes shit.

 

just eat a bit of them raw and you'll realise that you've been eating them heaps in other food and you'll get a taste for how to use them too.

I'm guessing you don't make your own pestos and tapernades, but if you ever do coriander and cashew if quite good, given that you'll tend to use basil more often than other green herbs in pesto.
