Every made a 'wilt' or 'rub' salad??????

Although a raw friend of mine put me on to the rubbing method first
1) Get one bunch of dinosaur (lacinado) kale
2) Remove the main part of kale stem and chop leaves finely into a bowl
3) Add about a tsp of salt and massage or 'rub' into the leaves until they 'wilt'
4) Add about 2 tsp of fresh lemon juice and massage into the kale again
Make a salad out of your wilted kale leaves
Some salad recipes to try:
Hemp Kale Salad
1 bunch kale
1/4 cup hemp seed
1 large tomato, diced
3 Tbsp olive oil or hemp oil for a richer taste
2 tsp lemon juice and 1 tsp lemon juice to massage into the kale
Note: add the oil last otherwise the kale will not wilt as well
Avocado Kale Salad
1 bunch kale
1 large tomato
1 avocado
1 stalk celery
1/4 cup olives
2 tbsp olive oil
2 tsp lemon juice and 1 tsp salt to massage into the kale
Take the avocado, olive oil and celery and blend it up into a dressing to pour over the salad.
Garnish with olives.
