Source: Rainbow Green Live Food Cuisine -Gabriel CousensAlthough a raw friend of mine put me on to the rubbing method first 1) Get one bunch of dinosaur (lacinado) kale2) Remove the main part of kale stem and chop leaves finely into a bowl3) Add about a tsp of salt and massage or 'rub' into the leaves until they 'wilt'4) Add about 2 tsp of fresh lemon juice and massage into the kale again Make a salad out of your wilted kale leaves Some salad recipes to try: Hemp Kale Salad1 bunch kale1/4 cup hemp seed1 large tomato, diced3 Tbsp olive oil or hemp oil for a richer taste2 tsp lemon juice and 1 tsp lemon juice to massage into the kale Note: add the oil last otherwise the kale will not wilt as well Avocado Kale Salad 1 bunch kale1 large tomato1 avocado1 stalk celery1/4 cup olives2 tbsp olive oil2 tsp lemon juice and 1 tsp salt to massage into the kale Take the avocado, olive oil and celery and blend it up into a dressing to pour over the salad. I also like to add it into salad(you could steam it alittle to see if that helps eith the gas) and I love to use it as a topping on pizza and in soup! This is pretty simple, Kale with hummus,tomatoes and scallions in a whole grain pita. I use calorie free dressing with it, but veganaise is great too if you still need your fat for the day. I add salt & pepper to taste & add kale about 10 min b4 its done. The kale gets tender like swiss chard but more firm & has a delicate taste. But you can put whatever seasonings you want. I've also made them with cooking spray instead of the drizzle of olive oil and they turned out delicious. If you have Vegan With a Vengeance, look at the Garlicy Kale recipe. The recipe includes a sauce for it, but I've only made it plain and I like it just fine.
