i used to do something that was similar to cottage cheese according to a lot of people, personally i've never eaten cottage cheese so i don't know.
but i just mixed tofu, olive oil, vinegar, garlic, salt and black peppers. then i chopped down some fresh spices and sun dried tomato. if you like olives you can blend that down too. as i said i don't know if it tastes like cottage cheese but it's damn good.
When someone says you don't train "functionally," you should just punch them in the face. Ask them how "functional" of a movement that was.
