I got this recipe from veganomicon, but changed it slightly
3/4 cup soy/rice/oat milk
1/2 tsp red wine vinegar
1 cup applesauce
3 tbsp canola oil
1/2 cup brown sugar
1 1/2 cups whole wheat flour*
3/4 cup oat bran or rolled oats (if you use rolled oats, like me, you should put them through a blender)
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup raisins
- Preheat the oven to 350 F & lightly grease a non stick muffin pan (I made little bars instead of muffins)
- Whisk the milk and vinegar in a large bowl and leave it to curdle for 1 minute
- Add the applesauce, canola oil and brown sugar and whisk to completely combine them with the milk
- In a separate bowl, sift together the flour, oat bran/oats, baking powder, baking soda, spices and salt
- Fold the dry ingredients into the wet ingredients, but be careful to only just combine them. Don't go overboard and mix too much.
- Fold in the raisins
- Spoon mixture into muffin cups
- Bake for about 30 minutes, until a skewer inserted into the muffins comes out clean
- Let them cool and eat them!
* You could use some protein powder in place of some of the flour if you wanted to. I was going to, but forgot..haha oh well...
