sosso Posted September 18, 2008 Share Posted September 18, 2008 I got this recipe from veganomicon, but changed it slightly 3/4 cup soy/rice/oat milk1/2 tsp red wine vinegar1 cup applesauce3 tbsp canola oil1/2 cup brown sugar1 1/2 cups whole wheat flour*3/4 cup oat bran or rolled oats (if you use rolled oats, like me, you should put them through a blender)2 tsp baking powder1/2 tsp baking soda1 tsp ground cinnamon1 tsp ground cardamom1/2 tsp ground nutmeg1/2 tsp salt1/2 cup raisins - Preheat the oven to 350 F & lightly grease a non stick muffin pan (I made little bars instead of muffins)- Whisk the milk and vinegar in a large bowl and leave it to curdle for 1 minute- Add the applesauce, canola oil and brown sugar and whisk to completely combine them with the milk - In a separate bowl, sift together the flour, oat bran/oats, baking powder, baking soda, spices and salt- Fold the dry ingredients into the wet ingredients, but be careful to only just combine them. Don't go overboard and mix too much.- Fold in the raisins- Spoon mixture into muffin cups- Bake for about 30 minutes, until a skewer inserted into the muffins comes out clean- Let them cool and eat them! * You could use some protein powder in place of some of the flour if you wanted to.
