You'll Need 1 small onion (or half a large onion) or leek, diced* 2-3 tablespoons minced garlic* 1-2 cans diced tomatoes* 3-5 tablespoons balsamic vinegar (to taste)* 1-2 shots whiskey, scotch, or bourbon * 1 zuccini, sliced 1 yellow squash, sliced 1 handful grape, cherry, or other small tomatoes 1 handful torn fresh basil 1 handful torn fresh spinach 1 handful torn fresh kale 1-2 cups crimini (baby portabello) mushrooms, washed and quartered 16oz whole grain pasta 2 cups frozen veggies of your choice Salt, pepper, onion powder, garlic powder, and red pepper flake to taste 2-3 tablespoons olive oil (or other cooking oil)
Make It Heat a pot on medium heat. Add oil, wait five seconds or so for it to heat up, then add the onion and garlic. Sautee until translucent. Add canned tomatoes, vinegar, and alcohol, and simmer for 10-15 minutes. Add zuccini, yellow squash, and mushrooms. Start a pot of boiling water and cook the pasta. When it's 2 minutes from being done, add the frozen veggies. Drain as usual. Add the kale, spinach, basil, small tomatoes, and seasonings. Let simmer 5 minutes.
Serve loaded marinara over the pasta/veggie mix.
*If you'd rather, you can omit these items and just use a pre-made marinara
