You'll Need1 medium potato per person, grated (I keep the skin on, but you can peel if you'd like)2-3 tablespoons olive oil (or other cooking oil) per potato1/4 diced onion or leek, per potato1 tablespoon minced garlic, per potatoCooked pasta (about 1/4 cup per person)Fresh torn kale and spinach (about 1/2 cup total per person)Fire roasted red pepper, sliced (1 red pepper per person)Crimini (baby portabello) mushrooms, quartered (3 mushrooms per person), or use marinated mushroomsSalt, pepper, onion powder, garlic powder, and red pepper flake to tasteSliced green olives (1 tablespoon per person)Balsamic vinegar (to taste)Vegan pesto concentrate (paste) to taste Make ItHeat a large pan on medium heat, heat oil, add onions and garlic, sautee until translucent. Add shredded potato and form into a pancake. Cook until crispy, add a spot of oil on the uncooked side, then flip and brown on that side. When the second side has just about browned, add all the ingredients except for the olives, arranged around the potato pancake. Season to taste and cook until greens have wilted a bit and everything's heated through. Serve with the potato on the plate and the rest of the ingredients on top. Garnish with olives, and a swirl a little balsamic around it to make it look pretty.
