Vegan Joe Posted February 23, 2009 Share Posted February 23, 2009 http://blog.seattlepi.nwsource.com/anticiplate/archives/162419.asp Serves 2 Prep time:1 minute Cook time: 15 minutes 1 c. vanilla soy milk 1 c. water Pinch of Kosher salt 1 c. organice whole rolled oats 1/4 c. canned pumpkin 1 tsp. pumpkin pie spice 2 tbsp. agave nectar 1/3 c. dried cranberries Bring soy milk, water, and pinch of salt to a boil. Add the rolled oats and reduce heat, stirring occasionally for 10-15 minutes (depending on how you like your oatmeal). Add in the canned pumpkin, pumpkin pie spice, agave syrup, and cranberries, stir until combined. Cover and remove from heat and let stand for a few minutes.
