As a personal trainer I am in charge of keeping people healthy....I have my own small window of time to eat and exercise than most. This is one of my go to's - Just spread 2 tbls of peanut butter or whatever nut butter you prefer on a piece of bread. Top with fresh nopalitos. (not canned!) I sometimes add some alfalfa sprouts if I have them on hand. Place other slice on top. Pair with piece of fruit and there ya go! Easy. I love Nopalitos.
