I haven't made this pumpkin bread myself, but any other recipe from this blog that I've tried has been great:

If you find a good vegan pumpkin pie recipe let me know. I made one once from vegweb that was made from tofu and I didn't like it at all.

Sweet, thanks. But what is Ener-G egg replace and where can I find it? I've never seen it before.

And if I find a pie recipe I will share for sure.

Ener-g is made of tapioca and potato starch. Whole Foods stocks it.

Oh, that's cool. I usually using baking powder to make stuff poof.

I don't know if simply adding more baking powder would do the same thing in that recipe as Ener-G. But I guess it doesn't hurt to try, at most all it would do is not hold together as well. I'm sure it would still taste good.

That was my mentality when I went into it, I certainly have enough cans. Made it with baking powder came out fine. At the beginning of the season they sold out fast and I couldn't get any. :psycho: Then one day at Von's I found 10 cans just sitting there and bought all of them.

So far I have done pumpkin pancakes, pumpkin bread, pumpkin muffins, and now I am working on pumpkin pie. 8)

Oh I love pumpkin muffins!

Someone on a different board posted that Bryanna Clark Grogan's pumpkin pie is good. Never tried it myself. But if I ever make one again I might use this, since it doesn't have tofu:

I made Bryanna's pumpkin pie a couple times last year. It was pretty good.

CellarYeti, a couple other ideas for "egg replacers" besides using the Ener-G Egg Replacer are: 1 tbsp of soy yogurt; a mixture of milled flax seed and water; and I think you can experiment with mixing a small amount of non-dairy milk and apple cider vinegar. I'm not sure about exact measurements because I don't always exactly measure things when I cook, but maybe messing around with some of those ideas will help you. In my early vegan days a lot of people I knew seemed to think using a banana instead of eggs worked really well, but obviously they make everything taste banana-y so I found I preferred other replacements.

I went to whole foods and got Ener-G egg replacement. I hope it works. The mix calls for 2 eggs so I guess that's 1 TBSP of Ener-G.
