Made it with baking powder came out fine. At the beginning of the season they sold out fast and I couldn't get any. Then one day at Von's I found 10 cans just sitting there and bought all of them. So far I have done pumpkin pancakes, pumpkin bread, pumpkin muffins, and now I am working on pumpkin pie. Link to comment Share on other sites More sharing options...

Never tried it myself. Adena Posted November 23, 2010 Share Posted November 23, 2010 I made Bryanna's pumpkin pie a couple times last year. It was pretty good. CellarYeti, a couple other ideas for "egg replacers" besides using the Ener-G Egg Replacer are: 1 tbsp of soy yogurt; a mixture of milled flax seed and water; and I think you can experiment with mixing a small amount of non-dairy milk and apple cider vinegar. I'm not sure about exact measurements because I don't always exactly measure things when I cook, but maybe messing around with some of those ideas will help you. In my early vegan days a lot of people I knew seemed to think using a banana instead of eggs worked really well, but obviously they make everything taste banana-y so I found I preferred other replacements.
