I made a tofutti based cheesecake once and it was delicious! I think it was this one:

Not a whole lot different than the one you posted, except it has egg replacer and no soy yogurt. Oh, and no honey.

with all the pricey ingredients you need, is it still cheaper vs buying the cheesecake premade? i haven't bought it in a while, but last time i think it was around $12 or so http://www.sweetsfromtheearth.com/product.html?pid=35

started making the crust for tomorrow with agave instead of honey and wheat free ginger snaps instead of gram crackers. My boy doesn't do well with wheat.

I intend to add some egg replace into the batter to make sure the cupcakes stand up

Saulo, make the crust out of the crushed biscuits and either a margarine or coconut butter.Then put it in a cake mold or whatever and compact it with a spoon till its perfect.refrigerate.Dont even need to bake them.They are already cooked.

Worked for me that way.

the cheesecakes collapsed in, but I sliced up some strawberries to disguise them. They were yummy and my man enjoyed them as well. The cheesecakes also won over the paper liners. I think if I double the amount of egg replacer and find new cupcake cups I'll be in good shape
