You can make it with brown rice if you prefer. Gyoza are great, I like to make mine with a mushroom filling. I don't follow a recipe per se. You can find directions all over the internet to make gyoza wrappers, and then just create your own filling. She really goes into detail about cooking techniques, specific Japanese ingedients, history/tradition of the dishes, etc. It's more like an encyclopedia than a cookbook. Some of the ingredients will be hard for me to find here, but I don't know what's available to you. Still, I will take some of the ideas and use them to create dishes with what I have. I haven't made anything out of it yet so no pics. I'm not going to post a bunch of the recipes since they are copyrighted, but if there's something in particular you are looking for I could send you 1 or 2.
