Tofu and brown rice have to be the easiest to digest foods around.

I've found that frozen green leafy vegetables or broccoli tends to be easier to digest that fresh.

My go to meal (use organic when possible) is one large baked sweet potatoe, 1 large avocado, large helping of Quinoa (grain like seed with lots of complete protein) and add nuts/seeds as needed/tolerated for extra protein/fat. This can be a real big calorie meal, feel free to tweak and add to it as needed.

I make a massive bowl of this stuff and I am starving just a couple of hours later as it is all readily available for the body.

Green tea helps the stomach to empty so you can have a hot cup of that about an hour later to help keep things going.
