An alternative to prepackaged, processed almond milk product

#1 Postby Bananas » Wed Jun 08, 2011 6:47 pm

1 cup almonds, soaked overnight
3 pitted dates
Pinch of salt
3 cups water

1. Combine almonds, pitted dates, salt, and water in a blender and blend on high for two minutes.

2. Strain through a cheesecloth-lined strainer into a large measuring cup or bowl. Store in a glass jar in the refrigerator for up to three days.

I absolutely love homemade almond milk. Try throwing some Brazil nuts in there too!

Unfortunately it has a load more calories. A cup of almonds has about 580 calories, plus 40 each for the dates, is right around 700 calories. Now even if you assume only half the calories make it into the final drink, that's still 120 calories per glass, while commercial almond milk only has half that many calories, plus no bitter aftertaste.

To each their own, I am just recounting my experiences and why I stayed with store-bought milks...

That's quite interesting to know. I don't count calories so would never have known.
