Cashew Cheeze

Miss cheese? Not anymore!

 

Ingredients:

 

1 package raw and unsalted cashews from Trader Joe's (or equiv., I think about 16 oz.)

1 - 2 tbsp stone ground mustard

2 tbsp nutritional yeast flakes (find at Whole Foods)

2 tsp ground black pepper

1 tbsp dried oregano

1 tsp salt

 

Note: You can add whatever other spices you like to vary the overall recipe. I think some fresh dill would be awesome, or even some curry powder.

 

Instructions:

 

1. Soak the cashews in water, an airtight container, for a few hours, or overnight; until soft.

2. Drain cashews, and rinse.

3. Combine the soaked cashews in a food processor.

4. Add all other ingredients, except the water.

5. Blend until smooth, slowly adding the water as you blend (may have to push down cashews stuck to the side of the bowl)

6. Serve immediately, or refrigerate if you want a firmer texture.

 

Notes: You can add/subtract water to change the consistency. I tend to like a concrete-esque texture. But, you could add more water and make it like nacho sauce. You could also add some fresh jalapeno to make it like pepper-jack. This stuff is awesome!

Do you need a food processor or does a regular blender work well too?

 

I suppose a regular blender might work, but I think you'll have to spend some extra time working the cashews down toward the blade. If you try, let me know how it works out!
