too many apples

my tree went nuts.... any ideas?

Apple sauce!
Peel and chop, add a tiny bit of orange juice, lots of cinnamon and nutmeg, bring to boil, simmer til soft. DEEEElicious.

apple sauce is a good idea, but mostly to use in baking.
i was really hoping for a good fall soup recipe.

I'd say mail them to me, but I'm 3,000 miles away.

You could always just eat them as is. I eat about 7 - 8 apples a day normally.

apples go great in squash soup, lentil soup, anything curried.

It is! Try sauteeing onions and celery with cumin and coriander...add a bunch of cut up squash/carrots/sweet potatoes/whatever, and then broth or water, boil, til tender...add cinnamon, nutmeg and a bit of lemon juice and hot spicy stuff if you like...and lots of grated ginger...you will sooo pleased.

last night i made split pea soup & used an apple instead of a potato. i couldnt even tell it was in there.
