Pasta Fagioli Soup

One of my favorites: Dinner in 20 minutes!

Pasta Fagioli Soup

1/2 small onion
1 clove garlic
1/2 bell pepper
1/4 cup tomato sauce
1/3 cup canned white beans
1/2 cup frozen spinach
1 tsp. dried basil
1-1/2 cups vegetable broth
1/2 tbsp. olive oil
1/2 large celery stalk
black pepper (to taste)

1-1/2 oz uncooked pasta

Cook pasta seperately in water. Saute onions, celery, green pepper, olive oil, and garlic until tender. Add beans, vegetable broth, tomato sauce, spinach, basil and black pepper. Bring to boil and simmer until pasta is done. Drain pasta and add to soup. Can sprinkle vegan parmasean cheese on top if desired. Makes 2 decent sized bowls.

I don't like soups, but this one sounds awesome!

We had this for lunch, it was great :D

I had to change a few details. I didn't have celery, so i took 2 carrots and a bit of fennel instead.
Also, i changed all the 1/2's and 1/3's and so on in 1's :roll:

I used too much pasta - 0.5 lbs. :oops:

But it was still good, thanks for posting :)
No one said it would be easy.

Well, I witnessed the "disaster" and I just loved it!! A good recipe combined with a good cook, what more can you want :?:

This is even better if u cook whole wheat patsa (like elbows) directly in it so the pasta absorbs all the flavor. Obviously u need to add about 2 big cans of thin tomato sauce for this (Hunts is thin) & some water. I LOVE this!!!
