portobello mushroom sandwiches

I altered this a bit from Rachel Ray. I made them a few weeks ago and they are amazing! Hope you enjoy!!

Ingredients:
portobello mushrooms
french bread
vegan cheese
roasted red peppers
spinach leaves
fresh parsley
salt & pepper
(marinade ingredients below)

Hollow out the middle of the french bread and place in oven at 350 degrees for 10 minutes.

Cover portobello mushrooms with marinade (below) and place on grill. Grill both sides.

Cut mushrooms into long 1 inch strips.

After your bread is toasted, put on grilled portobellos, vegan cheese, roasted red peppers, spinach leaves, fresh parsley, salt, and pepper.

marinade:

1/4 cup red wine vinegar
1/4 cup worchestershire sauce (or sub with something else if you like)
2 T. spicy brown mustard
2 T. olive oil
2 T minced garlic
pepper to taste

Thanks for the recipe. I've been looking for a good grilled portobello recipe. I haven't made them before. One question though: Do you remove the gills or leave them on?

you can remove them if you want to. I leave everything on & just weigh them down on the grill.

I have been making a raw version of this lately:

one or two portabello mushrooms (open or closed face sandwich) as bread
sliced tomato
sliced avocado
sliced cucumber
lettuce or greens
sprouts
carrot butter (carrot, olive oil, coconut oil, hemp oil, salt or a combination of oils to your liking blended in the food processor for a while)

It is filling like a big tofu burger! Really piles up high.

that sounds great! I'll probably still grill the portobellos, but the filling sounds awesome! I'll try this one out this week.
