after seeing and reading the benefits of spinach discussed in this thread, i am inspired to go to the supermarket and buy a lot of it. but what do i do with it once i have it?

anyone got some ideas or recipes that use spinach as a main ingredient?

An Indian dish called palak paneer or saag paneer (palak is spinach)... use pressed tofu cubes instead of the paneer (Indian cheese)... yum!

I saute shallots and/or mushrooms in a pan then add rinsed spinach, covering the pan to steam it a bit. It's simple and easy and tastes great.

I put spinach in fruit smoothies, it tastes great.

I also put spinach in my burritos instead of some kind of lettuce.

I used to put it in smoothies too. now i never have stuff to make smoothies. Spinach is awesome to just eat out of the bag as well.

You can make vegan fetuccini alfredo & stir in a bunch of spinach after it's done. I just gave the recipe on another board...here it is:


12 oz fettuccini
1 T. minced garlic
1 T. vegan margarine (or olive oil)
16 oz silken tofu
1/2 cup soymilk
1 t. garlic powder (or leave this out if you don't like garlic as much as I do)
salt & pepper to taste

prepare fettuccini according to package directions
in a pan, saute the garlic in margarine (or olive oil) until lightly brown

In the food processor combine:
tofu
soymilk
sauteed garlic with margarine (or oil)
garlic powder, salt, & pepper

process until smooth

stir in with fetuccini & spinach and enjoy!

I used vegan chicken and threw the strips in after I had prepared everything.

I also added a few roasted red peppers in the food processor with the ingredients because I love that taste.

If you like some spice, add a dash on cayenne pepper too. That's really good!!!
