best veggie burgers ever

#1 Postby kailla » Fri Apr 27, 2007 9:56 pm

so I just made the best veggie burgers. For the people that have Vegan Planet, refer to page 462...

1 T. ground flaxseeds
2 T. tamari or soy sauce
1/2 cup walnut pieces
3/4 cup cooked brown lentils, well drained
1/4 cup grated onion
1 T. minced fresh parsley leaves
1/3 cup wheat gluten flour (vital wheat gluten)
1/2 t. browning sauce (some aren't vegan, so check. Gravy Master makes a vegan one)
salt & freshly ground black pepper
2 T. olive oil

1) In a blender, combine flaxseeds and tamari, blending until viscous. set aside.
2) In a food processor, pulse the walnuts to coarsely chop. Add the lentils, onion, parsley, wheat gluten flour, browning sauce, flax mixture, and salt & pepper to taste. Process until well combined but with some texture remaining. Shape the mixture into 4 patties and place on a platter. Refrigerate for 30 minutes.
3) Heat the olive oil in a large skillet over medium heat, add the patties, and cook unti browned on both sides, about 4 minutes per side. (I grilled mine on the grill, and they turned out great)
