Vegan Tomato Pizza Sauce

#1 Postby veganmadre » Wed Sep 07, 2005 9:39 pm

I haven't tried this sauce either because I am a lazy bum and buy Pizza Sauce from Trader Joe's...but like the other, it looks mighty good!

Vegan Pizza Sauce

2 Tablespoons tomato paste
1/2 cup water
1/2 teaspoon olive oil
1/2 small onion, chopped
2 cloves garlic, minced
1 tomato, chopped
1 teaspoon each fresh basil, oregano, and parsley, minced
1 pinch cayenne pepper
Sea salt and pepper to taste

Mix the tomato paste and water in a small bowl. Heat the olive oil in a medium saucepan over a low flame. Sauté the onion and garlic until they begin to release their juices. Add the tomato paste mixture and the remaining ingredients and simmer until the sauce is thick, about fifteen minutes. Puree the sauce in a food processor or blender and store in the refrigerator.
