Junk in the Trunk Sandwich

I made this sandwich today and it was rediculously good!
I used Ciabatta bread cut so that it was more like a hoagie roll than a sandwich slice.
Then I put grilled eggplant, grilled red and yellow peppers, fresh basil, thinly sliced tofu, vegan gourmet cheese (mozzarella flavor) into the bread and grilled it in the George Foreman grill...I used a touch of margarine on the outside of the bread. When it was all done grilling I opened it up and put a little veganaise on it and some lettuce....
then I ate it all up!

Sounds good, except for the eggplant :wink:

You....don't....like....eggplant?

Actually that does sound really good though (even though I'm not very interested in vegan cheeses). It's making me hungry now actually...

I am sure it would still be super good with out the vegan cheese! and less fattening too!

we changed our menu now everything comes with shrimp but you can get tofu for $2...the fish sauce is free though!

I live a couple miles from New Jersey, which produces 2/3 of the world's eggplant. It's one of my favorites.

I'm trying to get a junkier trunk, so I'll have to try it! (My goal is to make J-Lo look like Kate Moss...alas, the stackage in the backage seems to be in a state of lackage at the moment...)

You will love this sandwich and you could even change it up some...similar but different is the panini sandwich..I would like to make more of those. I think I love sandwiches!
