Purdatory
Figured I'd post something that I like to make from time to time at lunch. I don't usually measure anything out, I just make an appropriate amount depending on how many people I'm feeding that day. Asian Coleslaw:1/2 bag of diced cabbage1 cup of shredded carrot1 tomato sliced into cubes1/3 cup of cashews, crushed1/4 cup of cranberrieshalf a broccoli diced up Place all ingredients into a salad bowl. Dressing:1/2 - 1 cup of Vegannaise1/2 cup of Miso dressing (Or any other type of asian dressing, such as President's Choice Soy & Ginger dressing) Whisk vegannaise and dressing together in a small bowl, once it's a consistent texture, drizzle over salad and mix together. This is a fast little recipe, only takes a few minutes to prepare. You can go all the way and make your own miso dressing, but I find myself usually with little time to took at noon, so this is a quick substitute by using a pre-made dressing and combining it with vegannaise.
