Soup:
Lime, tempeh, buckwheat soba noodles, mixed salad greens, soy sauce, chili pepper, avocado, green peppers, veggie bullion
Cook the noodles w/ bullion (as many to make it however noodle-y you want the soup to be, I usually try to end up with about as much noodle as greens) with the sliced chili pepper and throw the green peppers in for a minute or two before you pull them off the burner so that they get hot but not mushy.
I stirfry the tempeh until it's lightly browned on both sides. (10 mins or so? I throw in a tablespoon or two of olive oil and 1 table spoon of soy sauce)
Put the greens in a bowl, pour the noodle/broth combo over them. toss on the noodles and tempeh then squeeze out half a lime or so over the top and throw on half an avocado.
It works out pretty quick. I started making it one time after I wanted a salad then changed my mind and wanted to turn my salad into a soup so I added noodles and broth
