In terms of baking ive only made pancakes, but i've been using it in my morning shakes during workout days( coconut milk, peanut butter, ground flax seed, soy flour and a banana, and some pepitas). Not sure if it's something that you would really want to use raw though... there are quite a few vegan protein powders out there that would be better in a smoothie or shake.
