I eat these daily: 1 cup red kidney beans1 cup chickpeas1 cup mung beans1 cup lentils1 cup barley I soak them all at least one day prior, and then discard the soaking water and rinse before boiling them.Will I be safe eating all this big amount of beans and legumes? I have heard of excess fiber preventing absorption of nutrients in the body, but if you are chewing thoroughly and getting your veggies, then I don't imagine a problem coming up.
