Wheat Gluten/Seitan protein content.

I have vital wheat gluten powder that is listed as (per 100g) 80g protein. If I use 100g to make some seitan can I expect my finished product to still contain 80g of protein?

Yep, but remember it's low on lysine, so be sure to include good sources of lysine in the rest of your diet! :)

I eat a tonne of soy so that should be covered :)
