The calorie counts you are reading are probably wrong

"Whether we are talking about plants or meat, eating cooked food provides more calories than eating the same food raw. And that means that the calorie counts we’ve grown so used to consulting are routinely wrong. Part of the reason this had never been addressed before was that several areas of research had been overlooked, even by nutritionists."

 

I've known this for years just by common sense and I'm sure all of you do, too--raw foodists know it most of all. (A cup of sprouted lentils--measured before sprouting--is a snack but a cup of cooked lentils--measured before cooking--will fill me up so thoroughly, I need a nap.) What's fascinating is that scientists didn't seem to think the concept warranted serious enough attention to conduct studies and publish findings until now.
