I often just eat a ton of fruit for breakfast or do a vega shake mixed with almond milk and a ton of fruit and sometimes some greens.
One thing I've changed in my eating over that last couple years is my views on salads. Salads are now complete meals and can have up to 20 some ingredients. There are so many varieties, ingredients to use, and ways to make them. I used to only think of salads as sides to have once in a while to complement lunch or dinner. Now I view salads as a main entree and I love them so much I can eat them Breakfast lunch or dinner. I just change em up so much so I never get bored. You should see the size and frequency of the salads Brendon Brazier eats! If you aren't familiar with him he's the iron man triathlete who created Vega.
One other unique breakfast I eat but much less occasionally, Oatmeal or steel cut oats filled yams. Brown sugar is great but for those more strict agave is also a nice topping.

PS- I add hemp seeds to everything when I have them. Delicious and packed with good nutrients, I am addicted to them. Wish they were cheaper...
