Pumpkin Pudding

1/2 15oz can pumpkin

2 T flaxseed, ground

1/2 cup water

1/2 cup ice cubes

1/4 t cinnamon

1/8 t nutmeg

Sweetener as desired (I use 1/8t Stevia, I like it sweet like pumpkin pie)

 

 

Put the ground flax and water in a blender and pulse until the mixture thickens considerably. Add all the rest of the ingredients and blend until ice is thoroughly ground. You can cut the flax in half to reduce the fat, but cut the water in half at the same time. You may also add protein powder, but more water will of course be needed unless you like your pudding thick. Any fruit you desire could also be added as long as it won't taste ing.

I usually use soy milk instead of water to make it all thick and whatnot. I made pumpkin pudding a short while ago and it was goood!!

You can also get puree pumpkin that's already seasoned if you can't find all the spices you need.
