It reminds me of the marinated London Broil my mother used to grill when we were kids. I have found that using any flour (chick pea/garbanzo, whole wheat, regular wheat, spelt, rice) as the addition to gluten is fine - it just changes the texture slightly. seitan_man Posted August 5, 2008 Share Posted August 5, 2008 I've never heard of them or seen them in the UK, especially not as flakes. I have only made seitan once and tht was from a 'just add water' mix. Ideally I would like a recipe where the seitan is very chewy and meaty, not the awful rubbery and spongey texture that a lot of seitan recipes come out like.
