This step can obviously be skipped but ...mmmm, do you really want to? 2 Tablespoons tomato paste 1/2 cup water 1/2 teaspoon olive oil 1/2 small onion, chopped 2 cloves garlic, minced 1 tomato, chopped 1 teaspoon each fresh basil, oregano, and parsley, minced 1 pinch cayenne pepper Sea salt and pepper to taste TRIPLE THIS RECIPE Mix tomato paste and water in a separate bowl and set aside. Once cooked "al dente", drain and rinse with cool water. Immediately separate and place indidividually on wax paper or aluminum foil to avoid sticking. http://img413.imageshack.us/img413/5654/veganlasagna0057rc.jpg Mix Tofu Ricotta Following Recipe Below: Filling: 1 to 2 pounds medium tofu, drained, but do not squeeze out the water. Put tofu in food processor or blender to mix. You want it about the consistency of cottage cheese so you may need to add some soy milk to thin. Add the following: soy milk (as needed--see above) 1 tsp. dried oregano 1 tsp. dried parsley 1/2 tsp. dried basil 1/8 tsp. garlic powder (or as much spices as you want--taste and decide) - Definitely Add Salt! http://img316.imageshack.us/img316/7448/veganlasagna0072zl.jpg Cook sausage crumbles. Probably cost about 12 bucks to make but there is so much of it, many meals. My mom even liked it. I used spike seasoning in the tofu ricatta along lots of rosemary and gernal "italian seasoning" blends found at my parent's house. The sauce was awesome, but I dont think I had enough. I'd use 1 and a half tomatoes, perhaps 2, and more tomato paste, along with more of the other ingredients. Yay for vegan lasagna, Yay for vegan Madre! CollegeB Posted November 29, 2005 Share Posted November 29, 2005 Just tell her soy is in probably about everything else she eats. There is soy oil in so many quick foods. My mom bought some vanilla soy milk and didnt like it, she thought she could be allergic, but she liked my lasagna, and she eats plenty of other things which do contain soy. It seems really backward to me. NO offense intended - this is something that always got me when I saw it and reading about it here, I just had to ask. CollegeB - cool that you tried it! Glad you added more spice to the "ricotta"...mine was awfully bland! I tripled the sauce recipe and it was still too little...Next time.
