jonathan
This recipe is half my own and half from recipe books. i subsituted the ingredients i didnt have. green thai curry paste: 8 lemon grass sticks (7cm in length)3 medium garlic gloves2cmx2cm lump of ginger3-4 kaffir lime leaves8 black pepper corns1/2 teaspoon ground coriander1/2 teaspoon ground cumin1 medium sized green chillihandful of chopped fresh corianderlevel teaspoon salt30ml oilenough water so that all the above blends blend all the above. should come out as a reasonably thin paste take a large handful of cashews and fry until they are brown in oil. set to one side curry: 1 large onion1 medium yellow pepper1 medium red pepper1 1/2 handfuls green beans (any type is fine)1 400g can of coconut milk (full fat of course - non of that silly reduced fat stuff!)250g smoked tofu (smoked is better, but plain is OK)small amount of coriander leaves, chopped, to decorate. fry the onions until they are just turning brown. add the peppers, tofu and beans. fry until the veg is al dente. add the coconut milk, curry paste and cashews. simmer until the veg is soft, add the coriander leaves and serve. serves about 6 people. or 4 powerlifters! best served with basmati with wild rice mixed in jonathan

Guest
they are an aromatic herb. leaves from the kaffir lime tree. both should be available at fruit and vege stores if not the supermarket.
