Green Thai Curry

This recipe is half my own and half from recipe books. i subsituted the ingredients i didnt have.

 

green thai curry paste:

 

8 lemon grass sticks (7cm in length)

3 medium garlic gloves

2cmx2cm lump of ginger

3-4 kaffir lime leaves

8 black pepper corns

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1 medium sized green chilli

handful of chopped fresh coriander

level teaspoon salt

30ml oil

enough water so that all the above blends

 

blend all the above. should come out as a reasonably thin paste

 

take a large handful of cashews and fry until they are brown in oil. set to one side

 

curry:

 

1 large onion

1 medium yellow pepper

1 medium red pepper

1 1/2 handfuls green beans (any type is fine)

1 400g can of coconut milk (full fat of course - non of that silly reduced fat stuff!)

250g smoked tofu (smoked is better, but plain is OK)

small amount of coriander leaves, chopped, to decorate.

 

fry the onions until they are just turning brown. add the peppers, tofu and beans. fry until the veg is al dente. add the coconut milk, curry paste and cashews. simmer until the veg is soft, add the coriander leaves and serve. serves about 6 people. or 4 powerlifters!

 

best served with basmati with wild rice mixed in
