Panko Whole Wheat Breadcrumb Recipe

For those of you who have heard of/or use "Ian's Whole Wheat Panko Breadcrumbs" I'm pretty sure you've seen this recipe for Breaded Fried Tofu.

 

1 (14 oz) container tofu

 

1 cup of soy milk

 

1/2 cp eggbeaters or 1 egg

 

Salt and Pepper

 

1/2 tsp. garlic powder

 

1/4 tsp. basil

 

1 cup Ian's Panko Whole Wheat Breadcrumbs

 

1 medium onion

 

Canola or peanut oil

 

1. Dice onion and saute in 1 tbsp of oil until lightly browned and soft.

 

2. Slice tofu into 7 slices.

 

3. Add seasonings to soy milk. Soak tofu in seasoned soy milk 10 minutes.

 

4 Remove tofu, dip into eggbeaters or beaten egg, then into breadcrumbs.

 

5. Cover pan with 1/8 inch oil. Fry each side until lightly browned. Top with onions.

 

Serves 2

 

My question is, can this be done using an eggreplacer?

^ What julia said. You may want to try patting the tofu dry before dipping it into the flour+water mixture so it sticks better. Egg replacer will not work in this case, it only binds during baking... it's not sticky enough otherwise.

 

Do you have a wheat free recipe?

Yeah, open the package of tofu, insert fork. You could probably get a pretty good fried tofu going by coating it in chickpea flour-based batter. Chickpea flour tastes kinda nasty until it's cooked so don't be too discouraged if the batter tastes funny.
