Hi Everyone, I am new to the board and introduced myself over in the 'introduction' section. Looking forward to hold myself accountable and to share my vegan eats along with my training on my blog here. I am 41, married, mother of 3 and also a personal trainer, fitness instructor and online nutrition coach.

Ok, here is what I have eaten so far today..
2 peaches
Workout**1 hour Kickboxing/Tabata/Abs
1 apple
1 red bell pepper, baby tomatoes
BIG salad: 1.5 heads romaine lettuce, 4 bananas, 4 dates, 3 peaches
1 whole roasted kabocha squash w/ eggplant tapenade & homemade ketchup
2 peaches

*whistles* You are 41?? Great job maintaining your figure after having kids. I hear it's pretty tough!

Thanks everyone! Yes, it was challenging post babies, but I think the secret for me was that I worked out until the end of all of my 3 pregnancies. I was blessed to have uncomplicated pregnancies and really tried to eat for 1 and a baby, not 2 people. I also jumped back in quickly w/ short at home workouts.

Thank you! I have always eaten healthy and worked out, however I slowly evolved into veganism. Years ago I gave up meat, then eventually chicken, a few years later soy, then 2 years ago dairy, 8 months ago fish and eggs.. I have been vegan for about 6 months. I am really loving this eating style! How about you?

1230-grape tomatoes, cucumber
100-1 apple
330-1 head romaine, 4.5 bananas, 3 dates, 2 peaches, 1 red bell pepper
615-1 head romaine, 3 bananas, 3 dates
730-1 roasted kabocha squash, steamed broccol & onions, 1 package shiritaki noodles
830-1 slice ezekiel, 1 tsp. coconut oil, 1 banana, 1 date, sprouted buckwheat, 1 tsp. raisins, 2 dates, 3 bananas
915-50 cal. ww tortilla, 1 banana, 1 date

Check in. All is going great with eating and workouts. My training schedule is 2 hours on Mondays/1 hour Tues~Wed~Thursday and 2 hours on Friday. I take Saturday and Sunday as rest days.
Loving the last few weeks of my local farmers markets, today I bought a case of winter squash. =)
Ready to start the week off tommorrow with a hard workout.
