Veggie sushi is delicious, and you can get creative with what to put in your roll. You can make it with brown rice if you prefer.

 

Gyoza are great, I like to make mine with a mushroom filling. I don't follow a recipe per se. You can find directions all over the internet to make gyoza wrappers, and then just create your own filling. Some examples:

You can make a vegan donburi. Once again, you can really use whatever ingredients you want. Some more examples:

It is really an amazing book with LOADS of information in it. She really goes into detail about cooking techniques, specific Japanese ingedients, history/tradition of the dishes, etc. It's more like an encyclopedia than a cookbook.

 

Some of the ingredients will be hard for me to find here, but I don't know what's available to you. Still, I will take some of the ideas and use them to create dishes with what I have. And even if you don't make many things, it's still a really interesting book to read.

Perhaps you can get it in your library though? I'm cheap too, which is why I use the public library. It's totally free.

 

I haven't made anything out of it yet so no pics. I'm not going to post a bunch of the recipes since they are copyrighted, but if there's something in particular you are looking for I could send you 1 or 2.
