Tofu/avocado/veggie sandwich with tomatoes, vegan cheddar cheese, and jalapenos. With coconut water and an apple.

(Boring, I know. But I haven't really eaten out or made a special dish this year).

kale salad (dino kale, red kale, spinach, red cabbage, red bell pepper, cucumber slices, dried goji berries, udo's oil, lemon juice, raw pecans); quinoa mixed with hemp hearts; chickpea punjab choley with lentils; ginger-turmeric kombucha; wheat grass shot/green elixir

A ZLT from Daily Juice. It was if memory serves correctly, beets dehydrated into bacon sized strips with smoke flavoring, lettuce tomato, sunflower sprouts, on raw bread, with coconut mayo.

Porridge/Oatmeal I had this morning -Oats, Wheat Bran, Flaxseed, raisins, soy milk.

A little boring, but it's functional!

1. roasted organic cauliflower cheese made with soya blue cheese,
2. organic tofu and basil tortellini, with roasted hot pepper and tomatoe onion and garlic sauce
3. shared with lettuce onion, tomatoe, cucumber, fennel coriander with lemon olive oil salt and pepper dressing. vegan for 17 years you say?

Quinoa, soya beans and corn kernels all mixed up in bowl with sweet chilli sauce (home made). Made it up on the hop and was pleasantly surprised at how good it was

Vegan enchiladas with cilantro avocado cream sauce and spicy rainbow rice and bean salad as a side. So good.

Vegan fake chicken salad and couscous tabuleh from Whole Foods Market. So have I've only had home cooked meals and the availability of ingredients like vegannaise is very limited in my country.

Quinoa and lentil stew, tastes amazing, and is full of protein. This is my new favorite stew.

Vegan Proats:


Make a protein shake using 40g of powder (vanilla soy protein isolate is best).
Cook 100g (dry measured) of either rolled oats or rolled 5 grains in water until the texture is creamy.
Stir in 1 tsp of cinnamon while in the pot, and then serve in a large bowl.
slice a banana over the top then sprinkle tbsp's of golden flaxmeal over.
Lastly pour the protein shake on top and drizzle with sugarfree syrup, agave syrup or 'real' maple syrup.

I would say so far it would have to be the massaged kale avocado salad I can not stop eating!! I also made a vegan version of chickpea saag 100% from scratch!! So amazing.
