My favourite meal so far this year was a smoked tofu wrap with salad from the Manx in Ottawa! Yum!

My favorite meal of the new year has to be the meal my five year old children (boy-girl twins) helped me make on New Year's Day. It was a "stew" with black eyed peas, carrots, celery, onions, bell peppers, garlic, and spices. I served it over brown rice and sauteed kale. I gave it a smokey flavor, and was kind of going for the traditional southern US new year's meal (Dad's from North Carolina) but without the pork of course. OK honestly I did most of the prep work and cooking, but I always let my kids throw veggies into the pan to cook, they love to help.

My best meal so far was:
1 cup kidney/chickpeas
1/4 zucchini, 1 celery stalk, multitude of herbs, bellpepper, lettuce, parsley & jalapeño.

My favorite raw vegan meal that I had this year is tacos with salsa and quacamole, recipe from Raw Food Real World.

My favorite has to be the Avocado Quinoa salad from the Snack bar in Austin.

organic quinoa, arugula, roasted pepper-pineapple vinaigrette, avocado quarters, grilled pineapple

My favourite meal is undoubtedly the thrive diet pizza,it feels like cheating because you can change the base and topping so much and it still tastes amazing! We have it for both my husbands and my birthdays and our anniversarys (meeting and wedding). My favourite base combinations is quinoa and kidney beans and my favourite topping is onion,sweet potato,courgettes out the garden,olives and peppers with the "cheese" sauce on top. It really is amazing. We usually have it with a big mixed salad for one hell of a nutritious and beyond tasty meal. On special occasions we have it with home made gluten free carrot cupcakes to follow.

My husband is a crazy amazing cook! He made an awesome homemade hummus topped with pine nuts and roasted eggplant and garlic(baba ghanoush) along with fresh cut veggies for dipping and scooping. Yummy!

last night after a long day:

1st course
shredded raw kale with lime and salt drizzle

2nd course
brown rice
quick curried chick peas and spinach:
-1 sauteed red onion
-add 2 cans of chickpeas
-add 1/2 cup coconut milk
-add 1 lb frozen spinach
-add 1 tsp ground coriander
-add salt, pepper and curry powder to taste
-cook till tender

3rd course
chocolate chia pudding
-mix 4 tbs chia seed, 1 packet of stevia, 1 cup low fat chocolate soymilk, cinnamon, in a glass jar before dinner, shake, eat after dinner

Vegan Tempeh Softshell Tacos:

- Grilled tempeh
- Grilled onion, pepper and zuchini
- Black beans
- Avacado slices
- Homemade pico de gallo
- Tortillas

I have already indulged in taco night twice this year.

Tempeh Scramble with onions, mushrooms, broccoli, sweet potatoes, tons of nooch and some nice n' spicy hot sauce. Alongside was a massive green smoothie: spinach, kale, apple, lemon, ginger, and flax.
