last night after a long day:

 

1st course

shredded raw kale with lime and salt drizzle

 

2nd course

brown rice

quick curried chick peas and spinach:

-1 sauteed red onion

-add 2 cans of chickpeas

-add 1/2 cup coconut milk

-add 1 lb frozen spinach

-add 1 tsp ground coriander

-add salt, pepper and curry powder to taste

-cook till tender

 

3rd course

chocolate chia pudding

-mix 4 tbs chia seed, 1 packet of stevia, 1 cup low fat chocolate soymilk, cinnamon, in a glass jar before dinner, shake, eat after dinner

Really like this salad I just invented: coleslaw mix (white and red cabbage with carrots) with veganaise (original blue), mixed with a lot of organic spring mix + tempeth. Takes a couple of minutes to put together and is very satisfying and filling!

Rustic Potato Leek Soup! It was so delicious after my long run in the cold.

 

2 tablespoons extra virgin olive oil*

1 cup chopped yellow onion

3 large leeks, white and pale green parts, chopped

3 cloves garlic, finely chopped

2 teaspoons salt

3 medium red potatoes, chopped

1 bay leaf

4 cups vegetable broth*

2 cups rice milk*

1 tablespoon chopped dill

Salt and pepper to taste

 

 

Heat oil over medium heat in a large soup pot. Add onions, leeks, garlic and salt and cook for 6 to 8 minutes, or until translucent and softened. Add potatoes, bay leaf, and broth and bring soup to a boil. Reduce heat to medium low, cover, and cook until potatoes are tender, about 35 minutes. Add rice milk and dill and simmer, uncovered, for 5 more minutes. Season with salt and pepper. Discard bay leaf and serve.

Coconut milk

Coconut oil

Honey

Vanilla - straight out of the pods - yummah

Maca

Vega Sport - Berry flavor - I know I know, Im mentioning a meal with vega sports powder in it but I just tried the berry flavor for the first time and WOW, if you havent tried it you gotta go get some, I was all about the vanilla... not anymore!

 

 

Put that in your vitamix and jug it!

Best Vegan Meal so far? One of my kickass salads

 

Sliced up Dinosaur Kale

Cut up: Broccoli

Cauliflower

Carrots

Radishes

mushrooms

avocado

pumpkin seeds

tomatoes

sprinkle of nutritional yeast

drizzle balsamic vinegar on for dressing

 

Boom! Delicious and nutritious. Much more tasty than any salad I'd get in a restaurant.

Best Vegan Meal this year...

Yesterday I had a sandwich especially made for me on gluten-free bread with lettuce, tomato, avocado, sprouts, and tempeh (YUMMMY)...with sugar-snap peas and hummus. It was light, tasty, and filling! I know it is not outlandish or inspiring to most but it sure hit the spot for me! Sometimes simplicity tastes so gooood!

The best meal I've had so far this year was:

 

Maple tamari tempeh, brown rice with white beans and nutritional yeast, tamari braised kale, sauerkraut and a blood orange.

 

May not sound very exciting but it was very tasty. So much so I'm going to make it again tomorrow!
