 Post subject: Does anyone know how to make sushi rolls without rice?

I was wondering if anyone has suggestions as to something healthier that I can replace the rice in sushi with. It is one of my favorite foods and I have recently started making it homemade.

Any tried and true substitutes?

What about quinoa? It's like rice..only better! Much better for you too.

Steamed cabbage works alright. It's not super filling since it's just vegetables, but it works for a 'sushi craving'

Ya quinoa would be ideal but getting it sticky enough would be a challenge.
Ima have to try the cabbage too, I love cabbage and rarely eat it.
Have either of you tried this personally?

I sometimes just use tonnes of veggies and don't worry about a grain. So: julienned cucumber, carrot, zucchini, sprouts, avocado, with some shiro miso spread lightly over the nori, which is used to roll up the veggies like regular sushi.

Quinoa and millet are two options to consider. I've also seen noodles used.

Maybe buckwheat? I find it to have a chewier, more ricey texture. Might be worth a try....Hell, I might try it!
