Every year I get 1 zucchini from my garden... if I want more I have to buy them
Here is this year's zucchini. I don't know why they are always so big but all I can see is zucchini bread in my future hehe. I hope I have enough for a couple loaves that I can freeze for the winter. If not I will just buy a couple more
They always told me that only the tiny zucchinis were tasty but I've harvested the big 'uns like the one in your picture and turned them into amazing zucchini bread. It's only when they become the size of a small child that the flavor begins to wane (I gave one to a friend once that was so large, she had to secure it in the front seat of her car with a seat belt!) Try adding a teaspoon of lemon zest and 1/4 t. of nutmeg to your recipe, it will transport you to new levels of ecstacy! Also, if you find a friend who needs to unload a bumper crop of zucchini, you can lightly saute 3/4" chunks of it in olive oil and a little garlic, let it cool a bit, dump it into baggies, stuff it deep in the freezer, then whip it out for the lasagna, briami, and chili season next winter.
