Fallen_Horse Posted July 31, 2008 Share Posted July 31, 2008 I noticed that some Clif Mojo bars I bought seem to stick together very well, and the only ingredients that I can see in them that might cause the stick are brown rice syrup or maybe gum arabic. Does anyone know which ingredient it might be? I really love trying home made protein bars, but none of them stick together well enough for me to take with me! You can substitute with any of the gums, such as guar gum or xanthan gum, or others available. Carageenan or agar ocean plants also work as binders; though it will require cooking first for best results if you are simply adding it to an uncooked recipe. You may be able to not have to cook first if you're baking the bars. Flax and chia seeds, ground, will also act as binders and add nutrients.
