Lunch ideas... want to save money...

I want to bring lunch to work. I kinda get tired of eating same things cold clammy sandwhich or spending money eating out.

and PB and J and left overs getting old. What other choices including more exciting sandwhiches and not using fake meats?

 

Anyone have any ideas or great recipes for lunch? (got a fridge at work and a freezer, toaster oven and microwave.)

Even Cheaper..... I feed my family of 7 for about 50 cents-$1 each with these meals.

Key to using the site:

They are not ALL veg meals (but a ton are), but vegan sub are very easy to make. Also go for the healthier version (doesn't cost much more in the long run), for instance, your rice, pastas etc, I would recommend going to a brown or wild rice and a high fiber pasta.

 

With these meals, you can toss them in a crock pot before work, have a wonderful smelling home (and dinner ready) when you arrive home. And simply freeze the rest in marked and dated serving size containers. Grab what you feel like before work each day. And if you are "plumb tuckered" when you come home at night, you have plenty on hand to reheat. Beating the need to run out and grab costly meals, which tend to never be near as healthy (or tasty) as home made.

I used to buy bulk quinoa and a bag of frozen organic peas and corn. Cook it all up in a big pot then you can eat off of it for several days while changing the flavor up with different sauces/spices and/or adding in different veggies, putting it in a wrap with some salsa and avocado etc.

 

Bananas are a decent bang for the buck source of carbohydrate calories.
