mtguy1976 Posted August 29, 2010 Share Posted August 29, 2010 I've been playing around with different ways to make pancakes that are wheat free due to dietary problems and decided to go with this easy one for my pancake go to recipe: 1/2 C Flour (buckwheat or quinoa)1/2 C soy,almond or hemp milk1/2 tsp baking powder1 TBS ground flax seed1 TBS oil (I use coconut mainly for the taste)Add ins: banana, sunflower seeds, coco powder, chocolate chipsYou might need to add some more almond, soy or hemp milk to help thin it out if its too thickMix everything up and put it on nicely oiled hot skillet on medium heat and cook each side about 3 mins. mtguy1976 Posted April 10, 2011 Author Share Posted April 10, 2011 Another one I tried this morning was:2 bananas (the more ripe the better)1-2 TBS of peanut butter (or any nut butter will do)1 TBS of flax seeds+3-4TBS of water (or if you use an egg replacer the equilivent of 1 egg) Mash the bananas up very fine to like a pudding like consistency. Mix in the flax+water (or egg replacer) then add the nut butter (more if you want it to be thck) Heat up a pan, medium low (these burn very easily I learned ) add some oil. Pour some of the batter and cook for about 3-4 mins a side (so that it is cooked and light brown). I like to add peanut butter, agave and sunflower seeds on top.
