I dont usually use a recipe but I'll try to put one together for ya.

 

Use the freshest & ripest produce ya can get & take:

 

- 3-4 tomatoes

- 1-2 "anaheim" chiles, roasted in the oven, skin peeled off, seeds & veins taken out

- 1 or 2 handful's of cilantro, maybe more

- 3-4 cloves of garlic

- 1/4 cup onion, preferably "red" (it's more like purple)

- lots of fresh squeezed lime juice

- salt to taste but a good amount

 

Hand chop the ingredients, I prefer to leave them fairly "chunky" & think it tastes better that way. Enjoy!

 

Variations:

- use raw jalapeno's in place of the chiles

- use tomatillo's to replace half or more of the tomatoes.

Peach Mango Salsa

 

2 ripe Mangos chopped

1 ripe peach chopped

1/2 cup minced red onion

2 limes juiced

1/2 cup chopped fresh cilantro

1 large red bell pepper seeded and chopped

1/2 a jalapeno, chopped (optional)

salt to taste

 

Add all the ingredients in a bowl stir and chill. Best if let to marinate a few hours.

 

Delicious as salsa or as a chutney.
